Goat Cheese Stuffed Burger & Greek Salad Recipe

This goat cheese stuffed burger recipe is a delicious twist on your traditional burger with the earthy and buttery flavors of goat cheese and red bell peppers!

Ingredients: 

  • Cooking spray
  • 4 tsp spring onion
  • 3 tsp goat cheese
  • 113 grams ground beef 95% lean
  • 34 tsp Worcestershire sauce
  • 3 tsp light mayo
  • 1 tsp capers
  • 1 wholemeal bun
  • 12 red capsicum
  • 14 whole cucumber
  • 14 tsp yellow mustard
  • 214 cup fresh spinach leaves
  • 6 whole almonds
  • 2 tbsp feta
  • 112 tsp olive oil 
  • 112 tsp balsamic vinegar
  • 4 large olives
  • 14 medium tomato

Directions:

  1. Place the whole capsicum on a sheet pan and place in the oven for 30 to 40 minutes, until the skin is completely wrinkled and the capsicum is charred, turning twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil.
  2. While the capsicum roasts, chop spring onion for burger. Reserve 3 slices of cucumber for burger. Chop remaining cucumber, tomato and almonds for salad. Slice olives or leave whole as desired.
  3. Spray a small pan with the vegetable spray. Cook the spring onion for 3 to 5 minutes, or until tender. Add all but 1 teaspoon to the goat cheese and mix.
  4. Form the meat into a flat patty. Place a quarter of the spring onion mixture in the centre of patty and fold the beef over the mixture, concealing the stuffing. Sprinkle with Worcestershire.
  5. In a small bowl, combine 112 tsp oil and 112 tsp vinegar for salad dressing. In a second small bowl, combine the mayo, mustard, capers, and remaining spring onion for burger topping.
  6. Cook the burgers to your desired degree of doneness.
  7. While burger cooks, slice roasted capsicum into narrow slices.
  8. Place burger on the bottom half of a bun and top with mayo mix. Layer the roasted capsicum, 3 slices cucumber, and 14 cup spinach on the burger and cover with the top half of the bun. Mix chopped tomato, cucumber, almonds, and olives with remaining spinach and top with crumbled feta and salad dressing mixture.
