Fresh Fish Tacos Recipe
This is a quick and easy twist on traditional fish tacos with a little spice from fresh, homemade salsa.
Ingredients:
- 170g mahi-mahi
- 3 corn tortillas
- 1 tsp olive oil
- 3⁄4 cup black beans
Salsa:
- 1⁄4 cup chopped tomato
- 2 tbsp minced onion
- 1 tbsp minced coriander
- 1 jalapeno
- 1 tbsp lime juice
Directions:
- Brush mahi-mahi with olive oil.
- Grill or broil until cooked through and flaky. Combine chopped tomato, minced onion, minced coriander, lime juice and jalapeno to taste.
- Serve the fish with 3 warm corn tortillas and the salsa with cooked black beans on the side.
