Beef Salad with Coriander and Rocket Recipe

Enjoy this beef salad recipe featuring fresh coriander and rocket topped with marinated beef sirloin and fresh, homemade salad dressing.

Ingredients: 

  • 85 grams sirloin steak
  • 114 tsp chili powder
  • 12 tsp lime juice
  • 5 whole cherry tomatoes
  • 1 bunch fresh coriander 
  • 1 head parsley
  • 1 whole large carrot
  • 1 whole spring onion 
  • 2 cup rocket
  • 12 tsp Dijon mustard
  • 12 tbsp balsamic vinegar
  • 12 tbsp olive oil
  • 1 serving Chobani Blueberry Greek Yogurt
  • 1 medium apple
  • 1 slice wholemeal bread

Directions: 

  1. Preheat the stove or prepare the BBQ. While waiting, clean and pat greens dry. Shred spring onion and carrots after cleaning. Cut cherry tomatoes in half.
  2. Place the steak on your work surface and rub with the lime juice and chili powder. Grill to your desired degree of doneness. Allow to sit for 8 to 10 minutes after cooking.
  3. In a large bowl, combine the coriander, parsley, rocket, spring onions, carrots, and tomatoes.
  4. In a small bowl, whisk the oil, vinegar, and mustard.
  5. Place greens on a medium sized plate. Slice the steak and place on top of the greens. Drizzle the dressing on top or serve it on the side with yogurt, apple, and wholemeal bread slice.

Tip:
If Chobani Blueberry Greek Yogurt can’t be found, any Greek yogurt with fruit following these ranges can be used: Kilojoules: 418-520; Carbs 15-20 grams.
