Pesto Shrimp Pasta

Try our version of a healthy and savoury pesto prawn pasta!

Ingredients: 

  • 12 cup mushrooms
  • 3 tbsp pesto
  • 170 grams prawns
  • 12 whole medium tomato
  • 12 cup dry wholemeal spaghetti
  • 12 cup tomato sauce
  • 18 cup grated Parmesan cheese

Directions:

  1. Bring a large pot of water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente. Drain spaghetti.
  2. Warm a nonstick pan over medium heat and sauté mushrooms and chopped tomato in pesto. When mushrooms have softened, add prawns. Cook until prawns are pink, turning once, and add tomato sauce.
  3. Serve over spaghetti and top with Parmesan cheese.
